Delicious Easy Recipes : Sweet Potato Pancakes

Frozen pancakes and frozen waffles use to be my go-to for something easy to make for breakfast for my son. We’re not perfect eaters, but little by little, I am trying to replace the processed foods with healthier choices. Usually I make a batch of these pancakes to keep in the freezer. I cook a lot with sweet potato because it’s a super food. It’s a great source of fiber, iron, vitamins C and B-6, and magnesium, and it’s already naturally sweet. I also like to use whole wheat flour because it’s a good source of fiber, iron, and potassium. This recipe creates a delicious and healthier alternative to the processed frozen stuff I used to use. My kids love these sweet potato pancakes and I hope you do too.

Ingredients For This Easy Recipe:

  • 1 ¾ Cup of Wholewheat Flour
  • 2 teaspoons of baking powder
  • ½ teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 ½ teaspoon of cinnamon
  • 2 tablespoons of brown sugar
  • 1 ¾ Cup of buttermilk
  • 1 sweet potato
  • 2 eggs
  • 1 teaspoon of vanilla extract

Steps For This Easy Recipe:

  1. Put a medium pot of water to boil, while you peel and cube your sweet potato. The water should be ready once you’re done with the sweet potato.
  2. Let the sweet potato boil for 20-30 minutes. The potato is done if you can easily poke through it with a fork. Strain the sweet potato, but don’t toss the water.
  3. In a blender or processor, blend up the sweet potato cubes, adding water little by little, until you get a smooth consistency. Set aside.
  4. In a large mixing bowl, combine your whole-wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  5. In a separate bowl, whisk your buttermilk, sweet potato puree, eggs, and vanilla extract. Then combine your wet and dry ingredients.
  6. Since I make this for my small kids, I make the pancakes small. I measure ¼ cup of batter in a skillet over medium heat. It usually takes about 3-4 minutes on each side.
  7. Serve hot or set on a cooling rack to be frozen for later. Just takes about a minute to reheat a sweet potato pancake in the microwave.

This recipe creates about 8 regular sized sweet potato pancakes or 12-14 small sweet potato pancakes. It’s a good way to fill your freezer for those busy morning where you need something quick and simple.
