Frozen pancakes and frozen waffles use to be my go-to for something easy to make for breakfast for my son. We’re not perfect eaters, but little by little, I am trying to replace the processed foods with healthier choices. Usually I make a batch of these pancakes to keep in the freezer. I cook a lot with sweet potato because it’s a super food. It’s a great source of fiber, iron, vitamins C and B-6, and magnesium, and it’s already naturally sweet. I also like to use whole wheat flour because it’s a good source of fiber, iron, and potassium. This recipe creates a delicious and healthier alternative to the processed frozen stuff I used to use. My kids love these sweet potato pancakes and I hope you do too.
Ingredients For This Easy Recipe:
- 1 ¾ Cup of Wholewheat Flour
- 2 teaspoons of baking powder
- ½ teaspoon of baking soda
- 1 teaspoon of salt
- 1 ½ teaspoon of cinnamon
- 2 tablespoons of brown sugar
- 1 ¾ Cup of buttermilk
- 1 sweet potato
- 2 eggs
- 1 teaspoon of vanilla extract
Steps For This Easy Recipe:
- Put a medium pot of water to boil, while you peel and cube your sweet potato. The water should be ready once you’re done with the sweet potato.
- Let the sweet potato boil for 20-30 minutes. The potato is done if you can easily poke through it with a fork. Strain the sweet potato, but don’t toss the water.
- In a blender or processor, blend up the sweet potato cubes, adding water little by little, until you get a smooth consistency. Set aside.
- In a large mixing bowl, combine your whole-wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk your buttermilk, sweet potato puree, eggs, and vanilla extract. Then combine your wet and dry ingredients.
- Since I make this for my small kids, I make the pancakes small. I measure ¼ cup of batter in a skillet over medium heat. It usually takes about 3-4 minutes on each side.
- Serve hot or set on a cooling rack to be frozen for later. Just takes about a minute to reheat a sweet potato pancake in the microwave.
This recipe creates about 8 regular sized sweet potato pancakes or 12-14 small sweet potato pancakes. It’s a good way to fill your freezer for those busy morning where you need something quick and simple.
