This is a delicious and easy recipe that my family loves. It is a great way to start our mornings. It is also a great way to use up all the blueberries before they go bad.
Ingredients For This Delicious Easy Recipe:
- 2 C. whole-wheat flour
- 2tsp of baking powder
- 3/4 tsp of salt
- 1 Stick of unsalted butter soft
- 1/2 C of granulated sugar
- 1/2 C of brown sugar
- 2 eggs
- 1 1/2tsp of vanilla extract
- 1/2 C of milk
- 6-8oz of blueberries….Or however much you want to use. Does it really matter?
Steps For This Delicious Easy Recipe:
- Preheat the oven to 375°F.
- Wisk together the flour, baking powder, and salt.
- With a hand mixer, blend together the butter and both sugars, blend in the eggs one by one, and then blend in the vanilla extract and the milk.
- Little by little, whisk the flour mixture into the wet mixture. It will be very thick. If it is too thick, add a little more milk.
- Fold blueberries into the mixture.
- Using an ice cream scoop, fill a greased muffin tin.
- 20-25 minutes in the oven. Test by poking them with a toothpick; if the toothpick is clean, they’re ready.
- Store in Tupperware like container to keep fresh.
