As an infant room teacher, I saw a lot of different baby food combinations, but one caught my eye. Apple chicken seemed like such a gross combination, but it was one of the babies’ favorites. I decided to do my own experimenting with my son’s baby food, and this is my take on apple chicken.
What You Will Need For This Delicious Easy Recipe:
- 4-5 sweet apples peeled, cored, and cubed
- 4-5 chicken breasts
- 2-3 celery stalks, diced
- olive oil
- cinnamon
- rosemary
- thyme
- low-sodium chicken broth *optional*
Steps For This Delicious Easy Recipe:
- Preheat your oven to 375F or 190.5C
- In a 12in x 8in dish lay out the apples and the celery together and then lay the chicken breasts on top of that.
- Lightly drizzle olive oil over the chicken. Don’t use a lot.
- Add a small amount of water or low-sodium chicken broth to the bottom of the dish.
- Season everything with cinnamon, rosemary, and thyme.
- Cook in the oven until the chicken temp. is at least 165F or 73.8C (When done this makes a great dinner for the rest of the family)
- To puree, take half of one of the chicken breasts and some of the liquid from the bottom of the dish, or water, or low-sodium chicken broth, and blend the chicken until it has a smooth consistency.
- Add some of the roasted apples and continue blending until smooth.
- Serve immediately, freeze, or keep in the refrigerator for up to 5 days.
I really enjoy experimenting with taking regular dinners and turning them into purees, and this meal was something that both my husband and my children enjoyed.
